Gluten Free Icebox Cake

Introduction
I used gluten free cookies and coconut milk to make this dish celiac friendly. Feel free to substitute regular milk and your favorite cookies if you have no dietary restrictions.

Number of Servings: 8

Ingredients

1 Package gluten free snicker doodle cookies
2 Medium bananas
1 package instant pudding
2 cups coconut milk
1/4 cup raspberries
2 tbsp chocolate chips

Tips

Substitute milk for whatever you use, regular cookies rather than gluten free, and/or whatever berries you like best. I also like to sprinkle mine with ground flax meal.

Directions
Prepare pudding mix using milk or milk substitute, set aside. Crumble gluten free cookies in the bottom of a pyrex dish, slice banana and lay slices on top of the cookie crumbles. Pour pudding mixture over the bananas, top the mix with two additional crumbled cookies, berries of your choice, and chocolate chips.

Serving Size: Makes 8 servings
