Asian Inspired Tofu

1 block light firm tofu
1 large clove garlic, smashed!
1 scallion, chopped ( I actually used three, but I love them.)
1 tablespoon toasted sesame seeds
2 tablespoons gluten-free soy sauce
1 tbsp olive oil
1 teaspoon red pepper flakes
1/2 tsp agave nectar

1. Gently place tofu in a saucepan; cover with water and bring to a simmer over medium heat; reduce heat to low and simmer until warmed through, about 5 minutes.
2. Combine mashed garlic, scallion, sesame seeds, soy sauce, oil, red pepper flakes and agave together in a small bowl.
3. Before serving, carefully lift tofu from pan and pat dry with paper towels. Transfer to serving dish and spoon sauce on top.

Roasted Black Beans

One can black beans, drained and rinsed
1 tbsp olive oil
tsp sea salt
tsp cayenne pepper

1. Preheat oven to 450 degrees Fahrenheit. Line baking sheet with foil.
2. Drain beans. Rinse thoroughly. Drain.
3. Spread beans on baking sheet. Drizzle with olive oil. Sprinkle with sea salt.
4. Sprinkle with cayenne pepper. Stir with spoon until evenly coated with oil and spices.
5. Bake 15 to 20 minutes to desired crunchiness.

    Love Black beans and I may do this one on Vegan Friday.
