Spark Solution Challenge Days 6 & 7

Tuesday, July 02, 2013

Days 6 & 7 fell on the weekend. I wanted so badly to stick to the plan as written, but I had to adapt according to the plans we had.

First, Saturday's breakfast was supposed to be a healthy version of biscuits and gravy. I planned to make it and give it a try, but I don't even like "real" biscuits and gravy and just couldn't bring myself to make it. We had the bacon swiss scramble from day one instead. My hubby really wanted me to go fishing with him for the morning, so we spent the majority of the day on the lake in a boat. I couldn't make the lunch the book called for, so I packed the turkey sandwich and brought honeydew and watermelon. I resisted some of the treats my sister-in-law had brought, so I felt good about that. Dinner was just leftovers. I ended up at the low end of my calorie range and pretty much on target with everything else.

Sunday morning I made the protein pancakes with fresh blueberries on top~yum! I will definitely make these again! After church, they always have a BBQ with hamburgers, hot dogs, chicken and chips. It's free and a fun time to hang around and visit with people. I knew we would be staying this week, so I planned ahead and brought my snack to eat instead. When we got home after running a few errands, I had the curry tuna sandwhich which was very satisfying. Sunday nights are traditionally "Family Night" and we have pizza and watch a movie. I announced that I would be making the Dijon Pork Tenderloin and the mashed potatoes instead. My mom said she would bring zucchini~yay, Mom! She also brought a dessert for her, my hubby and son. I had the berry cobbler cup again~I love this recipe and it's so easy! Again, I was at the low end of my calorie range and maybe low fiber, too. I didn't like not being "on track", but I was proud of myself for making appropriate changes and not just eating whatever was easiest. On the downside, I didn't do any formal exercise. Despite that, I feel like I had a successful weekend!

P.S. Hubby only caught 2 small fish~we had to keep one because it swallowed the hook and was injured, but we let the other one go.

Awesome job with your eating! I almost always bring my own food to family events. At first I felt weird and yes people commented but now they just know:)

Good for you for sticking with the plan!
