Veganism Day 2

I actually started my journey into Veganism by choosing to go to Ovo/Lacto Vegetarian for health reasons; in the midst of that, I was educated on the ethical aspect of being a Vegetarian and chose instead to go Vegan.

So far I have learned, that I don't like tofu or soy milk... that's OK, the cleaner eating variety of being Vegan is by using whole plant foods, beans and lentils with occasionally using nuts and seeds... let's not forget my whole grains, brown rice and daily vitamin B12. I've learned the Vegan doesn't equal skinny or a healthy diet (so called "replacements" are very processed...if it needs a replacement, you probably shouldn't be eating it?)

Also, and my favorite part, I've learned that I can still have pizza night with my wife. Pizza pizza's dough (wholegrain for me please!) and sauce do not contain eggs, dairy or any animal product... topped with spinach, mushrooms on one side and pinapple, red peppers, on the other side - no cheese please! :) DELISH!!

Today I cooked salmon. My wife and I bought it a few weeks ago and tossed the bag into the freezer... I only realized as I inventoried the house for vegan friendly foods that I had fish (and my wife wont eat fish)... so today I tossed a couple steaks into a pan, dilled and lemoned it, then let it cook... it smelled as I remembered, I open the pan and press my fork into the flaky flesh... stopped and couldn't go any further. I am definitely seeing my food differently...

I'm not perfect, I wont claim to be... my car has leather seats (HA!) but I'm going to make every effort I can, for myself, my planet and all Earthlings.

    Many vegans are fine with keeping cars/shoes/whatever with leather seats -- they just won't buy those items going forward. Personally (I'm not quite vegan) I think leather is a biproduct of the meat industry and will break down better than synthetic shoes, so personally, I don't think leather is "bad" -- we all have to pick our battles =)

    As for tofu, I HATED it for years and then finally I found it cooked "right". Now I love it. You're right that it's a processed food and not the heathiest option for that reason, but if you're interested in trying again, I'd be happy to give you some decent recipes =)
