I'm a chef?! (With pictures)

Hola lovelies. Sorry I've been missing the last couple days! I've been lurking around, but not really doing much of anything. I injured my knee at the beginning of this week on Tuesday, and haven't been able to do much in the way of exercising since then. It's been pretty swollen, so I've been staying off it and icing it as much as possible. The swelling seems to have been going down between yesterday and today (finally) so I'm crossing my fingers in hopes that I can do an easy workout tomorrow. I miss it so much. And I am REALLY hoping that I can make it to Zumba at least once next week. I miss it SO SO much. The songs have been stuck in my head and everything. I'm seriously in love with it. I also finally gave in and bought the pink Polar FT4 HRM that I had my eye on, and I'm super eager to try it out. I am dying to know how many calories I'm REALLY burning in my workouts!

In other news..I decided to play chef tonight. I've been toying with the idea of making egg muffins that the lovely BRADMILL2922 gave me the recipe to, and I finally did it tonight. By very anxious to try them for breakfast tomorrow. Here's a picture of my finished product..

Then after I finished that I decided to make a stuffed pepper for dinner. Normally, I HATE green bell peppers with a passion. But, I wanted to try it anyway. Sooooo I sliced a green bell pepper in half, stuffed it with a mixture of quinoa, ground chicken, green chilies, onions, a splash of BBQ sauce and a dash of green Tabasco.. Topped each half with a good pinch of a shredded Italian 6 cheese blend.... And OHHH my goodness.... I'm in awe of myself, no joke. They turned out SO good. I will DEFINITELY be making it again. It is definitely one of the best things I have ever made, and I came up with the recipe myself! Here's a picture of the delicious beauty..

Sooooooo yummy. The green pepper was even delicious! I was so very pleasantly surprised, and very happy that I liked it, and proud that I decided to give green peppers another shot!

That's really all I have for tonight. It's been a long rough week, and I'm glad it's over. I'm hoping that next week is definitely better. Hope you all had a great week!

    Kudos for making lovely meals for yourself- I would probably love the stuffing but not the pepper so much- I was always one to eat the stuffing and ditch the pepper but I wonder if I used yellow peppers it would taste better- green are too intense for me some times.
Have fun at Zumba- I used to do Richard Simmons tapes back in the day so I remember having the music so stuck in your mind you could practically do the tape in your head.

    the egg muffins look yummy would you mind emailing me a copy of the recipe thru here, please?
and i love stuffed peppers its so easy to make so extremly filling and the best part is extremly low cal compared to many meals :)

    Ohhh wow - those both look amazing! Can you share the recipes?! I am looking for an easy, on the go type breakfast and those egg muffins look like they might do the trick!

    Wow! & definitely take it easy on that knee! I've been recovering, too... and now have only one more prednisone dose to go in the morning. Praying that the inflammation has gone down. Luckily, almost immediately on day 2 I was able to stand erect AND walk!

But, continued care and caution! We've both experienced how much it royally bites not being able to follow our routines!

I was so happy to be able to mow yesterday and today - before the rain finally hit us tonight! Am hoping I didn't push too far too soon - but really, I didn't rake or do much twisting...

Just, take care of yourself, and enjoy your feasting!!!

    sorry to hear you are still on the mends with your knee. i didn't realize how much exercise was a routine to me now until i couldn't do it! I was missing the pool like crazy... kind of like how i crave chocolate during my TOM!

Those peppers look delish! I should give them a try. I love peppers, especially the red ones!

    You are making me hungry! That looks amazing and I am someone who isn't a big cook but I will have to try the peppers. I love the mini quiche things, I've been making them to. :)

I am happy that your peppres turned out so well and I will definitely be giving those a try really soon! I am looking forward to tomorrow to hear how your egg muffins turned out because they look great!

Like I said earlier, easy on that knee. It is easy to push yourself to hard and then you will end up with another week of a swollen knee. You don't want any part of that!

Be proud of yourself Chef Amy! You did some excellent kitchen work today!
