I can't believe that tomorrow starts the first day of July! This year is flying by! emoticon

As far as my new year goals - one of my goals was to have Meatless Monday. I have held that goal every single week but vacation week. I'm so excited about this. I can't believe that I'm actually sticking to my goal.

Two weeks ago I started following the South Beach Diet Plan. It's going really, really well. I've made this week's food plan with an exception to Saturday. Saturday is most likely going to be my cheat meal. I still like having one night where I splurge for dinner a bit. It keeps me human. emoticon

WEEKLY FOOD PLAN:

MONDAY
Breakfast: Vanilla Chill (1 cup greek yogurt, 2/3 cup vanilla soymilk, 1 tsp vanilla extract, 1 coffee packet, ice cubes and sprinkled with cinnamon)
Snack: Celery sticks & cheese wedge
Lunch: Curried chickpeas & salad with mushrooms, cucumbers, peppers, radishes & walden farms dressing
Snack: Packet of almonds & sugar free jello
Dinner: Spinach & cheese omelet
Dessert: Fudge pop

TUESDAY
Breakfast: Ham & cheese omelet with chives, 1 cup almond milk
Snack: 1/2 cup yogurt, 1tbsp peanut butter, 1 tbsp cocoa, 1 packet of sweetener
Lunch: Roast beef & colby roll-up & spinach salad with mushrooms, tomatoes, cucumbers, radishes, and peppers with buffalo ranch dressing
Snack: Can of tuna mixed with herbs & 1/2 tbsp. mayo with celery sticks
Dinner: Pork & broccoli & cheese
Dessert: Fudge pop

WEDNESDAY
Breakfast: Smoothie (3 oz tofu, 1/2 cup mixed berries, 1 cup almond milk, 1 tbsp flaxseed)
Snack: Peppers & celery with 1/2 cup yogurt mixed with cumin, coriander & turmeric
Lunch: Spinach salad with mushrooms, cucumbers, radishes & tuna with balsamic vinegar
Snack: Caprese bites (1 oz mozzarella placed into hollowed out cherry tomatoes, microwaved to melt)
Dinner: Southwest steak & 1/2 cup cottage cheese
Dessert: Peanut butter delight (process 1/2 cup ricotta, 1 tbsp peanut butter, 1 tsp vanilla extract, 1 packet sweetener & ice cubes)

THURSDAY
Breakfast: Ham & cheese omelet with chives, 1 cup almond milk
Snack: 1/2 cup yogurt, 1tbsp peanut butter, 1 tbsp cocoa, 1 packet of sweetener
Lunch: Roast beef & colby roll-up & spinach salad with mushrooms, tomatoes, cucumbers, radishes, and peppers with buffalo ranch dressing
Snack: Can of tuna mixed with herbs & 1/2 tbsp mayo with celery sticks
Dinner: Salmon kebabs
Dessert: Lime ricotta dessert

FRIDAY
Breakfast: Vanilla Chill (1 cup greek yogurt, 2/3 cup vanilla soymilk, 1 tsp vanilla extract, 1 coffee packet, ice cubes and sprinkled with cinnamon)
Snack: Celery sticks & cheese wedge
Lunch: Curried chickpeas & salad with mushrooms, cucumbers, peppers, radishes & walden farms dressing
Snack: Packet of almonds & sugar free jello
Dinner: Barbecued chicken with broccoli & cheese, 1/2 cup cottage cheese
Dessert: Lime ricotta dessert

SATURDAY
Breakfast: Eggs & sausage
Snack: Sliced peppers and cucumbers with 1/2 cup cottage cheese with minced garlic, cilantro and red pepper flakes
Lunch: Canned chicken with hot sauce, Celery sticks & cheese wedge, spinach salad with tomatoes & mushrooms with balsamic vinegar
Snack: Packet of almonds & 1/2 cup greek yogurt with 1 tsp vanilla extract
Dinner: TBD
Dessert: TBD

WEEKLY EXERCISE PLAN

MONDAY
AM: Yoga
PM: After dinner walk

TUESDAY
AM: Yoga

WEDNESDAY
PM: Bicycle & upper body workout

THURSDAY
AM: Lower body workout
PM: After dinner walk

FRIDAY
PM: Bicycle & upper body workout

SATURDAY
Rest

Here's to a GREAT July!! I am going to begin a July challenge for my Lose 1 pound or 1 inch a week team. We were to choose our own challenge. Mine is to STICK TO WEEKLY WORKOUT PLANS!
