Today was a day of cooking and cleaning. Yesterday I ended up doing some extra cardio walking with the bf, so I'm taking it easy for the rest of the weekend. I need to sleep forever tonight.
Breakfast: I woke up ravenously hungry... but I didn't feel like eggs this morning. So I made a stir fry! For the sauce, I used toasted sesame oil and olive oil, mirin, tamari, sugar, and scallions. Then I cooked up some chicken breasts and zucchini noodles, shredded carrots, red onion, and slices of bell pepper... covered in the caramelized garlic sauce and sesame seeds. Delicioussssss!

Lunch: Chocolate almond milk. Guacamole wrapped in turkey slices. 1/2 an orange, 1 cup strawberries and blackberries.
Snacks: Umeboshi corn (I had a few more ears in the fridge, just waiting to pop into the oven). Homemade maple breakfast sausage (I made two lbs, tossed with maple syrup, thyme, sage, red pepper flakes, sea salt, and black pepper... and froze it in individual patties, wrapped in wax paper in a gallon ziplock bag in the freezer).
Dinner: Chorizo and Shrimp Tapas with Kale ( www.foodnetwork.c
). I served this with rice instead of bread... we have a lot of leftovers.
I also made Slowcooker Grass-Fed Beef Stew ( recipes.sparkpeop
) and stored it in the fridge for later.
