A fantastic Kale salad recipe

I am currently eating this and it's fantastic.

I've only ever used kale in green smoothies before this, but my Spud basket came with Kale this last week and since I love lemon, I had to try it. So very very good.

    Yum! My family is teasing me too, about the kale obsession. But here's one that even my veggie-averse sister loved:

2 TB tahini
2 TB maple syrup
2 TB olive oil
3 TB lemon juice
Cayenne or Chipotle pepper (to taste/optional)
S&P (to taste/optional)

Mix together and massage into chopped kale. Add chopped bell peppers, shaved carrot, and any nuts or seeds that you might like.

The dressing is KILLER!

    I just discovered kale and love it. Our local grocery store had samples in the deli and it was great. So now my lunch time salad is a kale, spinach and whatever mix. What I really love about it is I don't get hungry in the afternoon as compared to when I just eat a "regular" salad. Sometimes I even skip my afternoon snack, or postpone it to be an appetizer before a late dinner.
