So, my dear little daughter, Amber, was in a 'baking' mood this morning. She surfed the net last night and found a vegan recipe site & came across a recipe for Vegan Chocolate Muffins. She made them this morning. Rather than confuse her on how to make a recipe healthier I just let her make them as stated. Not a low-cal muffin, for sure, but OMG! They taste like Otis SpunkMeyer Double Chocolate Chip Muffins minus the chocolate chips. She wrote the recipe down but not the website, so I have NO idea where she got it from.
I put it into the Recipe Calculator. Here it is. DON'T blast me--I KNOW they could be healthier. When I make them again I will be subbing some of the ingredients--whole wheat flour for the white flour, maybe Splenda for the sugar or just cut the sugar in half, etc.
