These are some of my favorite anti-inflammatory foods; they work synergistically to calm the mind and quell inflammation all over the body. Give this meal a try next time you are stressed out... you will feel amazing afterwards, I promise!
Cold Spiced Salmon Salad w/ Lemon Parsley Vinaigrette, Sweet Potatoes, and Iced Green Tea.
What You'll Need:
Salmon filet(s) (I used wild Alaskan Sockeye).
Spice rub (Optional: paprika, sea salt, brown sugar, thyme),
Dash of Salt and Pepper,
Sunflower Seeds (optional),
Green tea bags and Matcha Powder
Step 1: Preheat the oven to 400 and make sure your salmon is thawed, not frozen. Make the dressing: whisk together 2 parts olive oil, 1 part lemon juice, dash of salt and pepper, 1 tbsp fresh chopped parsley, and just a touch of honey. You can add a tiny bit of lemon zest or grated ginger, too, if you want. Chill in the fridge.
Step 2: Make the Tea: Bring 8 cups of filtered water to a boil in a kettle. Once the whistle blows, turn off the heat and let cool for a few minutes (you want it to be hot, but not boiling, so it doesn't burn the tea). Put 8 sencha (green tea) bags into the pot and let steep for 2-3 min. Pour the tea (carefully) into a pitcher, add 1 tsp matcha powder and 1-2 tbsp honey to taste. Give it a stir and let cool. Once it's cool enough, transfer to a pitcher. Chill in the fridge.
(Matcha tea powder has hundreds of times more antioxidants than steeped green tea bags. Studies suggest green tea can help prevent cancer.)
Step 3: Clean and prick the sweet potato. Rub it with olive oil and sprinkle with a little salt if you wish. Place it on a large baking sheet and put it in the oven at 400 degrees for 50 min.
(Sweet potatoes are strongly anti-inflammatory, unlike white potatoes. They're also full of vitamins and minerals that help maintain healthy blood pressure.)
Step 4: After 20 min, place the salmon on a large piece of foil. Rub the seasoning and a little olive oil over the top of each filet, then wrap it up in foil tightly and place it next to the potato on the baking sheet. Bake for ~30 min. Refrigerate the salmon and potato after theyre' done.

Serve the salmon cold over the greens with the sweet potato and iced green tea on the side. Top the salad with sunflower seeds (full of the antioxidant vitamin E) and the chilled dressing.

Matcha gives a moderate caffeine boost (about as much as half a cup of coffee), but it doesn't give you the "wired" feeling of other caffeinated beverages, because of the tannins and L-Theanine--an amino acid found only in tea which calms and soothes the mind, and slows the absorption of caffeine.
