Day 2 went well. The oatmeal for breakfast made a HUGE bowl~way more than my normal serving! Unfortunately, oatmeal never sticks with me like they say it should. I'm usually hungry mid-morning and the same thing happened yesterday. I held off until lunch at 12:30. The lunch was really good~I wasn't sure about curry tuna with craisins, but the combo worked. I had cooked the chicken enchiladas on Sun, so when I got home from work, all I had to do was heat them up. They were very good and filling! I think next time I will use black beans and maybe make it more into a casserole as I haven't found a way to prevent the corn tortillas from splitting. They didn't look pretty, but that didn't affect how they tasted. I did the strength exercises from the book after dinner and only did 2 sets on a few of them. It's hard for me to follow from paper instead of a video, but I did my best. I also did some jumping jacks in between for my book club challenge. Again, it was nice to run the report at the end of the day and see everything in range. I feel like I am eating so much food, but the cals, carbs, protein, fat, fiber are all in range! I feel in control and motivation is growing~here's to Day 3!
