From River Cottage Veg Every Day: Roast New Potatoes with 2 Mojo Sauces.
The green sauce is a Mojo Cilantro made with coriander and the red sauce is a Mojo Picon made with red chilli and roasted red pepper.
For my portion, I used sweet potatoes rather than new potatoes (Paleo oblige!) and added, for both of us, some sliced cucumber and yellow pepper to dip in the sauce.
It was very good choice of the week indeed!
I'm not lingering too long tonight as I'm working on a blog for my "Journey into Holitic Nutrition" blog. The subject? "How to get children to eat their greens, yellows, reds, oranges, etc"
