Avocado Chocolate Pudding
Preparation Time: 10 minutes
1 ripe avocado, peeled, pit removed
1/2 to 3/4 cups water (start with a 1/2 cup and add more if needed to blend)
4 tablespoons natural non-alkalized cocoa powder
6-10 dates, pitted (depending on size and sweetness)
dash vanilla extract
Blend all ingredients in a high-powered blender.
May be served by itself or used as a topping for fresh fruit.
