Food blog: crustless quiche

Tonight I made the crustless quiche (spinach, onion, and feta) from sparkrecipes, with some minor changes. Here's the link:

I added mushrooms and garlic to the veggie mix. Salt, pepper, and nutmeg to the custard. Also, I used half nonfat and half 2% milk, since I ran out of my nonfat and had to use some of my boyfriend's 2%. Also, reduced fat feta and some bacon.

Here comes the bacon rant. mmm bacon. it's so tasty! And easy to fit into my diet! Calorie wise, 2 strips of center cut bacon is only 50! People give it such a bad wrap, and yes, I concede that the amount of saturated fat in it is bad. Sodium too! But, as long as you aren't eating a pound a week, you are fine! Anyway, I added 3 slices of bacon to it which turns out to be like 15 more calories per slice, with such a delicious tasty addition! /baconrantoff

The recipe says to bake it 25 minutes. I left mine in for 30 minutes, but I would say another 5 minutes would be better. It didn't weep at all, but the inside wasn't as cooked as I would have liked. Here's the picture!

Overall, I liked this and plan to make it fairly regularly! Plus, there are leftovers for lunch tomorrow! Now, I need to figure out what to do with the rest of these egg beaters!

One last note, my arm is healing nicely. I have full movement back, but it i still uncomfortable. Painful if I move too fast in the front or upward direction. I took a rest day (after 4 days straight of workouts). I still feel guilty, though! But, my arm really needs it, and I didn't want to go for a walk today. I hope to be back in the pool by Thursday!

    Yum! I made a crustless quiche this week too...a broccoli and cheddar one. It was DELICIOUS! Think I might try your spinach and mushroom one next week too.

    I love bacon, and I think it gets a bad rep. In moderation, like you said, it isn't too bad. Just drink extra water to flush out that sodium and move along!

This quiche looks really good, thanks for your review of the recipe! I have it saved and haven't made it yet. I'm glad you posted this! Now I actually really freaking want quiche... sigh.

    Yep, bacon in moderation isn't a terrible thing. I try to avoid it because of sodium mainly but it is awfully good! Speaking of awfully good, that quiche sure looks awfully good! May have to give it a try sometime.
