Day 2 of The Spark Solution
Breakfast was interesting. I have never had blueberries in oatmeal before. Not too bad.
Loved lunch. Curry Tuna is definitely a new favorite. With the veggies on the side, it was a lot of food. Loved dinner, which was a really pleasant surprise. I normally hate chicken enchiladas, and do not like corn tortillas cause there mushy. This recipe was really good though. Another new favorite. Hubby liked it too.
Exercise was done early this morning. I pulled and dug up weeds for 90 minutes, and I figure that is a good strength workout. Then I walked the entire 2 hours my son was at soccer practice. I stayed on the grass as much as I could today instead of walking on the blacktop. Thought it would change things up a tad and work some different muscles. My thighs are sore from jogging yesterday, so I didn't think the leg workout would be too wise today. Due to the heat, I had 64 oz. of water downed before noon again.
After lunch, I sat down in my easy chair for a few minutes to discuss afternoon plans with my son. I took my glasses off cause my eyes were bothering me, allergies I figured. Next thing I knew, it was 3 hours later and my son was wanting a snack before the went to work at VBS. I do not normally nap during the day, and wasn't planning it. Not sure if it was because of the change in diet/exercise or something else entirely. I'm still tired, so hopefully I'll sleep well tonight.
All in all, another successful day! I'm more determined than ever.
