I decided to try the 2-Week Spark Solution Challenge because I have been lacking motivation and struggling to get the 10 lbs off that I have gained since October. I have never been able to stick to a "program" or follow a book in its entirety, but since this is just 2 weeks, I am going to go all in and see how it goes.
The Spark Solution requires a ton of planning~the menu plan covers 3 meals a day plus 2 snacks. It was a BIG shopping trip! I already have a lot of the pantry items and I still spent just under $150 for the week. There will be leftovers to carry into week 2 and I had some misc items for 20 year old son who lives at home. It was mostly fruits/veggies and lean meat. I like planning my dinners ahead, so it wasn't too overwhelming for me. I don't usually plan my lunches or snacks, so that added a little extra prep time. I cut up a lot of the fruit and veggies as soon as I brought them home from the store. Then on Sunday, I cooked Mon and Tue dinners ahead since I am working and will just heat up like leftovers for dinner.
So, how did day one go? First, the breakfast was so yummy! It was more than I typically eat and I wasn't hungry all morning. I had my lunch at 1 PM and then a snack at 4:30. Dinner at 6:30 and final snack at 7:30. It ended up being 1544 calories (probably a little less because I didn't use as much cheese as the recipes call for to keep cholesterol lower). This is still in my SP calorie range, but I usually eat around 1200 cals, so it seemed like a lot of food. When I ran my report at the end of the day, it was so nice to see everything in range~cals, protein, carbs, fats.
The exercise for the day was to be 20 min cardio. I walk/jogged for 23 min. I walked the stairs at work once and also walked home from work. I was supposed to stretch after working out, but no time before work, so I did 10 min yoga DVD before bed.
Overall, it was a good day and I am excited to see the results at the end of the week!
Here are some pics from Day 1 dinner~One Dish Southwestern Chicken and Rice. It was very good and filling. Hubby LOVED it!
These are the ingredients needed, plus 1 pound of chicken breasts
This makes 6-1 cup servings, so lots of leftovers for us!
