Quick and Easy Meals

Peanut butter and spreadable fruit on whole wheat bread is always an old standby. I wonder how many PB&J sandwiches I have eaten in my lifetime so far? lol I used to have milk with this, but my lactose intolerance won't let me drink a full glass of milk anymore. I suppose some sort of vegetable would round out this meal. Is that why the school used to put pickles on our peanut butter sandwiches instead of jam or jelly? Yuck!

Tuna fish + celery + relish + mayo with whole wheat crackers... maybe, but I have found that a little apple cranberry chutney mixed in with the tuna is more to my liking than the tired tuna recipe I ate when I was little...

A salad with a grilled skinless chicken breast sounds yummy. Add some sliced strawberries and a few blueberries to sweeten up the lettuce and a mild vinaigrette gives it some zing!

Leftovers with good portion control also make for a quick meal.

I have never had a peanut and butter sandwich. We had either peanut butter sandwiches or jelly sandwiches...we never mixed them.

Something I like to eat is
shredded chicken mixed with diced green peppers, onion, celery, graded carrots and lite mirical whip. On whole wheat bread. This is good cold or warm.

I love peanut butter and pickles. My school never served pb, my great aunt worked in the cafeteria and back then those ladies made most lunches from scratch.

My go to lunch lately has been quesadillas made with a low carb whole wheat tortilla. Low fat mozzarella cuts the fat down. Straight cheddar is too greasy. Plus I can put lettuce on the side and top all of it with salsa. Yummy. emoticon

Yum. Have you tried that tried PB2, peanut butter with 85% of the fat removed? It's not bad.

The salad with cut up cooked chicken is my favorite! Thanks for sharing.
