I've only used my 'emergency meal' system once since becoming a Sparkie! It's one that I enjoy enough to eat as a 'non' emergency meal too, but with a little thought it can become more filling and nutritious.
Lunch is always my problem. My husband and I have different tastes, and there is always something to satisfy him, but sometimes 'nothing' that seems particularly healthy. It's on days like these that I resort to.....
It's so easy add vegetables to a pan and cook them. If I cook them whole I mash them in the stock (which probably started as just plain old tap water) to create chunks, or blend them. It can be as hearty and satisfying as required, and is a good way of using up an odd carrot or sprig of broccoli. There are ways of adding protein too, either with pulses (careful, these sometimes need just a bit more thought and preparation), a very small amount of grated cheese or....
Wait until the soup is ready to eat, simmer gently over a very low heat. Beat the egg in a small bowl then gently let a stream fall into the soup. It will cook instantly. Don't forget to season with herbs and pepper. Enjoy
Hmm. I was going to have tuna, but I might just have soup for lunch today. Glad I thought of that.
