This week we had a breakfast challenge and part of that is to share.
What follows are a few of my favorite breakfasts
ok- the healthy ones...
but still very good
Lentil hot pot is what I call it
Cook lentils and add in some greens toward the end and I also sometimes throw an egg on top and cover it and the steam will cook the egg and then serve with my favorite spicy curry ketchup
I also like porridge made with oats or buckwheat or quinoa or millet or a combo- a bit of maple syrup and fruit and a nut milk
green smoothie- a couple of fruits,flaxseed,greens of whatever type and a milk/yogurt and I will often have slice of toasted ezekiel bread with bit of peanut butter on it with that
leftovers are also great and of course no nitrate bacon and eggs ( I get them from a local farm) I do consider being vegan from time to time and I am and then I am not....undecided
probably the bacon and for that matter the meatloaf I make.....
well those are some of my breakfasts
