One of the best cakes I've ever eaten

My mom made a emoticon cake for Father's Day. It was So good and easy, too!

Here's the recipe:

1 box of Angel Food Cake mix
1 20-oz. can crushed pineapple, NOT drained

In a bowl mix the two ingredients together (dry cake mix and pineapple with juice). Bake in a greased pan at the temperature listed on the cake mix package until it is light brown and a toothpick comes out clean.

Mama cooked it in a 9x13 pan. Then she cut into squares and added strawberries and whipped cream.

It was SO delicious! I didn't take the time to figure out the calories, but I think Angel Food has less calories than other cakes. This one was good enough to eat by itself without the strawberries and whipped cream!

    Whipped cream isn't so bad if you do it in moderation. I refuse to take all the fun out of my diet. I've done that for years...decades even. Now, if I want to have a cookie or an ice cream, I do it. And you know what? I'm finding that I just don't want them that much any more. (Maybe giving myself permission to have them is working a kind of reverse psychology in my mind. emoticon ) Cookies have too much fat and sugar in them and I don't like the way it feels when the fat coats the inside of my mouth. All the sugar is just simply becoming too sweet for me anymore.

    Therefore, whipped cream will do the trick of adding fun to my diet as long as I do it in moderation.

    A little girl, who thinks of me as her grandmother, came to spend the night with me two nights ago. We made this cake and ate a couple of pieces of it before she left late yesterday. She took the cake home with her because I surely didn't want it in the house with me! I have had enough cake this week...and even this month!

    Enjoy the cake everyone. It really is yummy enough to eat with absolutely nothing on top! emoticon

    Oh, BTW...when I baked it at my house, I noticed that the time to bake it took a little less than the time recommended on the package (about 15 minutes less). I cooked mine in a 9x13 pan instead of a loaf pan.

    Yummy! You are right about angel food cake being low in calories. The pineapple and strawberries would not add much. However I am not sure about the whipped cream. I may try this when I get back to Ohio when we have folks over. Thanks for sharing. emoticon
