Back! Did you miss me?

I have been knocked on my butt with a horrible cold for almost 2 weeks now. Finally I am back. I am still dealing with sinus and my stomach is all off kilter due to strong antibiotics I was on, but I am feeling 100% better.

While I was sick, I was so far off diet, I was in a different state. I ate everything with wild abandon and got into the mind set "As long as I am off plan, might as well eat as many M&Ms and brownies as possible." Part of my food choices definitely had to do with feeling ill, I couldn't really taste food and I was craving super spicy and sour foods - like mexican, indian, and thai.

I am going to give myself until Friday before I step on the scale and assess the damage. I tracked all my food yesterday (though I went over calories). I went to the grocery store and bought stuff to make salsa chicken (sparkepeople recipe). I put that in the crock pot this morning, will hopefully be eating it the rest of the week. I can't even think of doing exercise right now, still feeling weak. I will try to take the dog for a walk today.

This morning I tried something new - so-called oats in a jar. (Mine weren't in a jar, just a bowl with a lid.) You put oats and (in my case, vanilla almond) milk in a "jar" and let them soak over night, then eat them in the morning without cooking them. I added lots of cinnamon, a handful of blueberries and half a banana. I had my normal 2 eggs along with the oats. It was interesting. I used steel cut oats and they were very very chewy, like i never thought I would be able to chew them enough. It would probably be better with regular oats. I think I will try them again, but put them in the fridge earlier and stir before I go to bed. Also, I could lose the banana and have more blueberries, loving the blueberries just now.

    First: YES! You were missed! And I'm glad you're feeling better.

And about the oats, here's an idea (I did this for several years before switching to cooked steel cut oats in the crock pot, but that's another story). Take 1/2 cup TYPICAL rolled oats (the oatmeal we all grew up on), a big dollop of fat-free vanilla yogurt, 1/2 cup cut up fruit (I particularly love the tart cherries from a can, with a little of the water), and a packet or two of Splenda. Put them all in a refrigerator bowl with a snap on lid, stir all together, put in the fridge overnight.

When morning comes, pop into the microwave for a few seconds to warm or eat it chilled. The yogurt and fruit juices will have taken away the cardboard texture of the oatmeal.

One of the nice things about this is you can make 3 or 4 in a batch and have them ready. On mornings when I have an early meeting, I can drop this into my insulated lunch bag along with a plastic spoon and eat it after the meeting. It doesn't spoil.
