If you've been reading my blogs you've learned that even though I have the desire to eat right, I don't really like to cook. Specifically I don't like the prep and cleaning work that goes along with cooking. That's why breakfast is usually oatmeal with berries or peanut butter. Lunch is leftovers, tuna, or whatever healthy easy food I have around, and dinner I cook because a) I have to eat and b) my family usually wants to eat. Snacks are hard-boiled eggs, yogurt, nuts, or fruit. If I could get away with oatmeal for dinner I would.
I need more veggies and variety in my diet but that means I have to actually work.
.......what to do?
Well, I just may have figured it out. Last week I looked in my fridge and realized I had veggies about to go bad and had the crazy idea to prep them and freeze them. So I took an hour and washed, sliced, peeled shredded and then froze what I had. It works great! Having veggies on hand all week to add to stir-frys, tacos, omelets, stuffed cabbage, lentils, etc. For one hours work, the pay-off is totally worth it. It's so easy and healthy! I'm going to do this every week.
