It's been a hectic month so far but, I'm glad to say that all is going okay. I've been so busy with the remodeling that some days I don't fit in a workout and food is just whatever I can grab and I've spent a lot of time in the truck scouring the earth for free supplies. But, some how I have still managed to lose 7 pounds so far this month! Which is more than I lost during the entire month of May. So, despite not meeting my standards for food and fitness...I'm progressing very well and I can't complain that much. Also, the jacuzzi tub is installed, potty relocated, new water heater installed, floor tile board installed and bathroom walls are ready to start going back up so it's been a good month.
I found a better walking route now. I am hoping to start jogging it once I adjust to the hills. It's right at three miles and so far it's taking me about 17 minutes a mile to walk. It's a set of roads that are pretty much a commitment because once you start around it there is no turning back unless you jump fences and meet some cattle (bulls will chase you down so that's not really an option) because turning around is just as far as going the full circuit so it's good for those days when I just don't want to. Only downside is that they are very secluded gravel roads with three houses and mostly field...some older gentleman stopped and weirded me out by saying "Be safe girl, this is an awfully lonely road for a young woman to walk on alone". Thanks, mister for creeping me wayyy out....but my husband knows the route and we have a time limit before he comes looking for me, I carry my cell phone (which has no signal but can still dial SOS), and I usually sport a walking stick and believe me if my life depended on it I could beat a person down with it.
I haven't been sticking as strictly to a vegetarian diet as previous months and I do have to say I'm feeling it. My energy is a little off. But, at least I was able to get my hands on a small supply of whole organic free-range chicken, and about 5 pounds of ground venison so I'm not eating terrible chemical laden meat....I also have to note it's AMAZING how far you can make meat last when you pre-package it into 4 ounce raw portions (6 oz for DH). But, I've been relying heavily on caffeine lately to make up for the energy loss and I was doing so well for so long being caffeine free.
The garden is doing FANTASTIC! One of my neighbors (about 2 miles away) just tilled hers Wednesday and planted a ton of burpee plants and I've already got a couple radishes going to seed to save for next year, corn 3 foot tall, peppers that are ready to pick, and tomatoes, and cucumbers coming on. The watermelon, golden honeydew melon, spag. squash, and lemon cucumbers have started flowering and I may have over-did it on those because the middle of my garden looks vaguely like a pumpkin patch with melon vines every where. Only thing that didn't come up was my kaleidoscope carrot mix and strawberry popcorn...guess the seeds were bad or something because I planted the entire packages and not even one sprout...either that or some day soon I will have 500 carrot sprouts in a ten foot section of row. Crossing my fingers that farmer's market here I come! I'm also hoping to take some to the local food pantry to donate and with 4 zucchini plants, 4 yellow squash, 5 pepper plants, 5 eggplant, 6 watermelon plants, 3 spag. squash, 8 cucumber, 10 tomato plants, and 8 bean plants...I should have more than I know what to do with....needless to say I went a little crazy planting this year and if you've ever seen some of these plants growing you'll know one plant produces a TON.
I got up an hour earlier than usual this morning. Had some apple cinnamon quinoa, and a turkey sausage patty...drank my fill of coffee and got a 10 minute Spark video done. The plan now is to take a container and go walking and pick some mulberries and prep for making mulberry jam. I've got chicken bones and veggie scraps in the crockpot making stock and past that I think it's going to be an active rest day.
