Bought some white and brown rice and beans at Walmart yesterday, cheapest source I can find in my area. Here in Colorado don't have the bottom dollar prices like some places have. But still I managed to save about $1.50/pound, and it looks like rice prices are low right now.
Today made two batches of beans. The black beans will be used to make up some veggie burgers. Will save me $ vs. the $3.98 box of 4 that I usually by. To the pot of red beans, once done then I added two cups of brown rice to cook for another hour, and then have a batch of that to eat on during the week. Goes good by itself, in burritos mixed with other veg, on toast. Yum.
I have two new goals now. One is to visit my niece in Maine next summer. Another is to send one grandchild to horse camp next summer. So I figure I can shave off of the food budget by being more frugal, and what better way to help support my healthy eating goals!
By cutting down on eating out, and sugary treats and stuff, that will help my waistline and the budget.
Today shows one pound down since last week. It may be more, I'm going to wait to post until tomorrow's weigh in since I didn't get on the scale first thing.
Signed up for an extra two hour restorative yoga class this afternoon. Just what I need after a day of running around with kids at the horse camp yesterday. Its amazing what they learn after one full week: how to groom, tack, and riding skills. Then the last day they paint and decorate their horse for a parade in front of parents. So fun to watch! Although I must say horse Gunner was not impressed to be wearing glitter and lipstick LOL. I stopped the child before trying to put shadow over his eyes, that wasn't going to work out well for either of them.
