South Beach Phase 1 / Week 2 / Take 2

Weighed in! 181lbs! I will seriously lament not weighing myself initially but I should get over it.
Today is a new day and I'm ready! Coffee in hand w/ unsweetened coconut milk and stevia. Going to make some over medium eggs and top them on some broccoli.
Parents are coming down for Father's Day and my dad's birthday. There will be food! Some not so healthy, but since my parents are working on eating healthy too, grilled chicken and lots of grilled veggies. My mom is making her potato salad and I may just have to have some. It's a rare treat and one worth having so just a little! No regrets!
So I told my mom about my South Beach journey and as usual, she was supportive. We went out grocery shopping, got new grill grates (oh the grilling possibilities!!). So we were going to get a late lunch and I had to reassure my family that we can eat wherever they want to go. So we went to Kelly's, I got the chicken cobb with balsamic vinaigrette and ate half. Saved the rest for dinner at night but since I ate most of the chicken, I topped it with the left over steak we had. :)
Wow today flew by! My parents came over and my mom made breakfast for us. Scrambled eggs, bacon and I roasted myself some broccoli. My mom apologized for the biscuits thinking it might be a problem with my past bread love. I admit, they were homemade and looked amazing, but I declined and REassured her not to worry about it. She knows how hard it is with weight problems so I was appreciative. Everyone else had to deal with the carb coma. I was just fine but I didn't say one word about it. ;)
when it came time for grilling around lunchtime, we had all the usual grilling stuffs. My mom had brought a recipe for grilling veggies, and I showed her the squash kabobs from the SBD Parties and Holidays cookbook and she was like YES LETS DO IT. Zucchini, yellow squash and button mushrooms. Everyone who had it loved it. I wrapped my burger patty in lettuce with spicy mustard. I did take a portion of the potato salad but I found I really didn't want it. :( But I picked out the egg pieces ;) Dunno, maybe I was full?
Dinner was the leftovers. I did have some potato chips and a small cake brownie. Again, celebrating Fathers Day and my dad's birthday, it's okay. :) Back to the grind tomorrow.
No weight gain over the weekend! :D Just wanted to check!
Breakfast: eggs and broccoli with coffee & unswtnd coconut milk. My mom picked up a bunch of lettuce so there is a lot of salad in my future. I seem to have lost the fear that a salad can't be a meal, but oh it can be!
Lunch was a salad! chopped some low sodium turkey meat, sliced cucumbers, and feta. Dinner I made a eggplant pizza. It was okay. I'm over this PMS fatigue. Going to bed.
Husband and I's 2nd wedding anniversary. :)
Breakfast was egg, spinach, mushroom, feta fuffins. coffee and unswtnd coconut milk.
Snacked on celery and almond butter. Lunched on zucchini, squash feta bake and a salad.
Snack was greek yogurt.
Dinner we grilled some chicken and i roasted some broccoli.
Exercise on level 3! Ouchies!
Breakfast, fuffins again with the coffee.
Snacked string cheese and 100 cal pack of almonds.
Lunch: zucchini, squash and feta bake with some boiled shrimp.
PM snack: string cheese and leftover roasted broccoli.
Dinner: steamed chicken and broccoli from chinese takeout. dipped in garlic sauce. no rice!
dessert: mocha ricotta creme.
Exercise: level 3 and we played catch for 20 minutes.
Breakfast: last of the egg fuffins and the coffee
I really had no appetite this morning and since I was so busy I didn't realize the time so I took lunch early. Had some grilled chicken nuggets from chickfila and the veggie bake for a side.
Afternoon snack was at home after work, afternoon was even busier.
Got home and paid for the lack of appetite. So tired! But I put the chili in the crock pot at lunch so I made myself exercise for 20 minutes. So tired! And so tempted to eat stuff that's bad for me. Ugh!!
Dessert will be ricotta creme tasty.
