I love breakfast and eat it every day!! If I skip for any reason I start to fade very quickly and very quickly find I have no energy and then start turning to anything I can get my hands on. Not a good situation. Usually during the week when I am working I make a protein shake. Sometimes toast with almond butter mixed with a little Nutella. I find that in trying to track calories I don't get as much almond butter as I really need and I fade faster than when I drink my shake. Sometimes I do a Weight Watchers frozen meal. I love the little breakfast burritos.
But, when I have a casual Sunday or Saturday and I am in the mood to cook I love to make scrambled eggs. I toast up a piece of whole grain bread, scramble up one or two eggs (or one egg with one egg white) place my eggs on top of the bread and then top with a little lowfat shredded cheese, some chopped tomatoes, and some diced avocado. Then I might top with a little mild green taco sauce. This is just such a yummy combo to me. I like to have a cold v-8 juice with it and maybe some fresh fruit. The combo of protein, fats (from the avocado) and fruit and vegies keeps me going for a long time!!
