~ DAY 17 ... Slow Carb (4HB) Challenge ~

... just about every day at my job there are snacks and leftovers from faculty meetings and workshops. While it is great that the library gets to enjoy these gourmet foods & desserts, for someone like me, it is very challenging and in a way annoying.
... Today they brought us cookies, French bread / butter, potato salad, some kind of pasta dish, thinly sliced beef and salmon that looked like it had been poached. When I tasted it, it had way too much oil in it, I really don't know how they prepared it, but I didn't like it. They did however, have a vegetable dish that looked interesting... roasted baby asparagus paired with orange and yellow heirloom tomatoes on a bed of lentils. It was dressed with a balsamic/basil type dressing that was delicious. My co-workers didn't seem to like this dish, maybe is was too "healthy", I don't know, but anyway, there was more than enough for me to be able to eat some for a snack at work and I brought some home for dinner... "can you guess what's going on my shopping list for this week!!!!

S: Asparagus and heirloom tomatoes w/lentils in olive oil
D: Baked chicken wings and asparagus with heirloom tomatoes and lentils
