While searching for a fast/simple microwave snack, I cam across Microwave Potato Chips. After reading all the comments...eye-balling a lone potato on the counter...I decided to give it a try. It was DELICIOUS! One small potato sliced in food processor made a lot of chips! I had lots of calories still in the budget for the day so I dipped the chips in Labneh (Light) which is thick cream cheese...topped it off with chives. I will be making this recipe again for sure. So long Pringles, which I had crossed off my shopping list forever once I joined SparkPeople. At least I know I won't have a weak moment and grab a can of two while grocery shopping. This recipe takes all of 10 minutes at most. Clean-up a breeze. 1 potato serves 2...1 serving 84 calories.
Really had a great day today. I walked for an hour, stationary bike for 25 minutes and been up moving around all day...usually I'm sitting reading, on computer or texting on cell. I FEEL GOOD!
