Started a slow carb program today. Actually, I started yesterday by preparing my lunch and breakfast for today. Please be aware that I am a baker, not a cook. Cheesecake I can make, but roast chicken will either be burned or raw. So, along this adventure I will also be working on my cooking skills. This was proven by the hour and a half it took to make a Thai chicken wrap recipe. I used almost every pan we own and every countertop. Everything is all cleaned up now and the dish turned out very tasty. Success! Good night moon, good night kitchen and pans, good night Spark Points, and good night everyone!

    Start small, start simple. My favorite go-to lunch is chicken thighs sprinkled with seasoning, baked in a table-top convection oven for 25 minutes. DIng! Done! (Thighs are really easy, because you have to really TRY in order to dry them out, unlike breast, which is kinda finicky. Even if you don't want to eat the skin - which is my favorite part - just leave it on to cook and they will stay moist and flavorful!)

    It takes a little time and effort, but you will build up your recipe repertoire. It is truly worth it and the skills will last you a lifetime.
