Spaghetti Noodles with Tomato Sauce

The sauce is tomato juice, tomato paste, garlic powder and some parmesan cheese.

But this is not your usual noodles. I made veggie noodles with a spiral vegetable slice. I sliced zucchini, turnips, rutabaga, sweet potato, parsnip, golden beet (so far) and then I steamed.

Then I also had steamed broccoli, cauliflower, carrots, peas in the pod, peas, spinach, baby bok choy, mushrooms, and eggplant.

So I ate spaghetti with no guilt and all veggies.

    THat is a very good idea in place of noodles. It just gave me an idea that I could use a cheese grater and slive zuchinni and use it to. Great recipes you have been making!

    Love my spiral slicing machine. Zucchini noodles to me are better than the spaghetti squash I used to buy and so much easier to make.

    Wow - sounds like fun. I generally use spaghetti squash as my noodles, but this is a lot more variety!!

    That sounds so good. I wont one of those gadgets. I have heard of zucchinni noodles but never knew how to make them. How did you cook the noodles?
