Sunday, June 09, 2013

Got my Prevention magazine and saw this recipe and decided to give it a try. emoticon Yumm.....and simple to make.

Strawberry Custard Cake

1. Heat oven to 375 F. Coat shallow (1 1/2") baking dish (2 qt.) with baking spray. Hull and slice 1/2 lb. strawberries. Arrange in dish.

2. Beat 4 lg. eggs and 1/3 cup sugar on low until smooth, 2 minutes. Stir in 1 cup of 2% milk, 3 TBSP each whole wheat and all-purpose flours, 1 tsp. each vanilla extract and lemon zest, 1/4 tsp. cinnamon, and a pinch of salt.
Pour over berries and bake until puffed, set and golden. 40 minutes. Cool and dust with confectioners' sugar.
This will make 8 servings.

Hope you have some extra strawberries and can give this a try. I'm not much of a baker, but this was easy enough and really tasty.

Wow! This looks soooooo good! I make Roasted Rhubarb and Strawberry Ice Buttermilk this week and it was delicious - also low calorie, low fat and low sugar for a dessert. I love, love, love anything strawberry!

I am having a friend over to celebrate her birthday today and just bought strawberries yesterday so I am going to make this for dessert. Wow, very timely, looking for something low cal with berries! Thanks so much. I will let you know how mine turns out, I don't have whole wheat flour so will have to use all white.
Sounds wonderful, my tongue is twitching emoticon just thinking of it.
