a month of vegetables

It was a month ago today I started a vegetarian diet. For a while I ate vegan, but here and there slipped. Funny thing, is I feel like I can do this diet. I dont have to cook, unless I want to, I shop every other day, so the goods are fresh, and I do not feel like I am on a "d i e t ". I have favorite standbys (kale and grapefruit for breakfast) about 5 days a week, and can often hit 1600 cals of veggies and fruits without a lot of difficulty and 40-60 grams of fiber.
1400 calories includes a bana and half avocado and I can see the difference in my nails and skin. I eat "off the menu" but the swings are smaller and I usually put the processed grains back on the store shelf. Without beef and salt, I dont crave soda, and the worst indiscretion may put me up to 1800 calories.
I keep a bar of dark chocolate in the house, and it lasts more than a week. Times have changed. I have changed. My weight loss is very slow, but steady judging by the change to the shape of my belly.
