CSA First box

Thursday, June 06, 2013

Ahh, the lovely CSA box full of colorful produce. Here is a picture of all the unpacked goodies:

Strawberries!, Radishes, Kale, Green Onions (red bottomed ones too), red leaf lettuce, basil, arugula, and watercress.

I also get a bread option with my CSA box, so this is a 10-grain bread.

True, some of the strawberries didn't make it til picture time, and they were so amazingly sweet and delicious too!

And here is my lunch, based on a recipe included with the selections.

Watercress and Arugula Salad with Dates and Almonds (and Feta Cheese)

It has a homemade light viniagrette on it as well.
I posted the recipe in my previous Blog (yesterday).

Does anyone know of a use for the radish tops?

That looks great. I give my radish tops to the little cottontail rabbit that has adopted us. emoticon

Awesome! I've never used radish greens, but I've heard you can use them in a salad like arugula.

Looks like a great box! I love Arugula!

I use the Radish leaves in soups. Add a potato for consistency, if you want, and it is delicious. If I have carrot leaves, they are added in my slow cooker at the time.
Do not wait too long otherwise the green leaves might fade and turn yellow.

My CSA starts soon, too. We've had great weather lately, so that should help.
