Smoothie challenge starts Friday, I'm tired and groggy from limiting my caffeine intake. Normally I have 3-8 cups of coffee a day. Yesterday I had one cup of black tea, today I had half a cup of green tea. Tomorrow will just be herbal tea, then I'll be fully prepared to take on 3 days of plants, plants, plants.

Bf & I are tentatively committing to doing Whole30 in July. Which is weird for me to say, because looking back on posts from a few months ago I was hating on Paleo really hard. Fact is, when I omit grains I feel better. Those carb cravings disappear. I want to eat broccoli, not cupcakes. And I have the best muscle definition I've ever had in my life. So I want to do this challenge and see what it can do for me. I've never been so strict for so long.. we'll see.

Bf has National Guard training starting Friday, and he won't be back for 2 weeks. I'm bummed. I'm positive I'll get enough exercise, because I don't have anything better to do, but I always overeat when I'm by myself. At least I'll be coming off the smoothie challenge so maybe I'll be reset and ready to eat healthy!!

Tomorrow is a big barbecue at work. It was scheduled for Friday and I would miss it due to the smoothie thing, but they've bumped it up due to some storms. Burgers, hot dogs, bbq, baked beans, cole slaw, ice cream... nothing healthy at all. Sigh. Oh well, one last hoorah. BUT I'm not gonna go crazy I promise.

I didn't tell you guys, but over the weekend I took the advice from the wonderful blog The Clothes Make the Girl, who wrote the cookbook Well Fed. It's a Paleo cookbook, go figure. But she'll grill off a bunch of meat on Sundays, and wash, chop and steam her veggies to crisp-tender, then box everythign up. On the night of, she's just gotta plop in some coconut oil, dump some veggies, meat, and spices in the pan and there's dinner. Last night I had ground beef, peppers, onion, tomatoes, turmeric, and cumin on top of mashed sweet potatoes. Ready in 10 mins! Tonight I think I'll do chicken thighs with eggplant, mushrooms, and tomatoes on top of cauliflower rice. I'll have to come up with a spice blend to do it justice. Open to suggestions....

er/tomato would be yummy with an Indian-inspired spice mixture. Corriander, cumin, mustard seeds, paprika, tumeric, ginger and garlic. Pan roast the spices to get them nice and smoky.

    I had also been kind of anti-paleo, but after drastically reducing my intake of grains, I can definitely see the merit in the program. I love the idea to pre-cook a lot of the parts of the meal ahead of time. That will definitely cut down on the super-hungry-eat-whatever-I-see-fir
st problem I have!
