Creativity... instinctive to some people and other (like me) struggle to find it. I love meal plans and set menus - it tells me what to fix for dinner without me having to wrack my brain to come up with something. Maybe that's why I love "the Plan" so much as it gives me a 20 day menu plan. Of course I cannot get all the ingredients down here but I can either substitute or eliminate.

A few recent meals outside my "box"

Flank steak stuffed with spinach, mushrooms, onions and goat cheese served with
a) cabbage

b) roasted italian vegetables

The leftover italian veggies with a bell pepper stuffed with a ground beef mixture topped with manchego cheese

"clean the fridge" chicken curry

Today's meal will be chicken fajitas to use up the last of the chicken out of the freezer, the rest of the peppers and onions.

Time to go to the markets tomorrow. DH will have to drive me as my Jeep is still out of commission. The new part should be in tomorrow, so keep your finger crossed it will do the trick and make it run again. This Jeep has been my "baby" for the last 15-1/2 years and I really want it to run again and be able to drive it for quite a bit longer! If nothing else it will be nice to have my own wheels again and not have to beg a lift every time I want to go somewhere...

    I love Mexican Manchego... it is a zillion times better in Mexico! Jeeps are a great vehicle for those Mexican roads!

    Wow, your dinners look FANTASTIC! And I love it that you've been driving your jeep for the last 15 years. I get really attached to my cars too. I've been driving my mini-van for nearly 10 years. I've always wanted a jeep though, ever since Terminator, and Sarah Conners driving into Mexico in her jeep...

    Those meals just look so wonderful Lis. I can't believe how beautiful they are and I am sure they taste great as well.
I know so much what you mean when you say you can't get everything we need but there are many substitutes.
Hope you get your jeep back soon!

I am so opposite to you , I find it hard to stick to a meal plan! LOL I have those creative genes! LOL
