This morning's recipe was the Egg Cups (Mini Quiche with Brown Rice Crust)
A serving of these is 2 of the cute little cups. The other two are for another day.
I had some cooked peppers, mushrooms, and onions left over from some fajitas the other night, so I used those for the veggies. I also used ready to serve brown rice, so the prep was pretty quick.
These were very good, of course mine tasted a lot like fajitas. I look forward to making it again with different veggies and spices.
