Tonight for dinner I tried the Carolina Style Barbecue Chicken. I served it along with Hot and Sweet Rainbow Slaw, and Better Buttermilk Biscuits.
The Chicken was very good, I liked the tangy sauce.
The Rainbow Slaw, I couldn't find the slaw mix with the broccoli and stuff in it, mine just had cabbage and carrots. But the apple gave it a nice sweet crunch that i enjoyed.
The biscuits -- hmmm. Last time I made them, I used King Arthur whole wheat flour, and they were just too wheaty (but they were biscuits, anyway). This time, I tried Bob's Red Mill 100% Whole Wheat Pastry Flour for a lighter taste ... but I ended up with baked pancakes instead of biscuits! They tasted good, but they are rather flat. The batter was just too runny and I spooned it onto the sheet, instead of shaping and cutting. A new recipe perhaps? I could have added more flour and been okay, or next time I will try a white whole wheat flour and see how that does.
