Meal Plan June 1 and 2

Saturday
Breakfast: local free range organic eggs and raw cheddar served with a side of mixed berries

Snack: probiotic veggies

Lunch: low cal mexican soup (made with squash, zucchini, fire roasted tomatoes, cilantro, cumin, jalapenos, and home made broth) served with a side of low carb whole grain tortilla with one piece of laughing cow queso cheese

Snack: greek yogurt mixed with frozen berries

Dinner: turkey burger with whole grain bun, topped with tzatziki and served with a salad


Sunday
Breakfast: whole grain sourdough pancakes topped with berries and greek yogurt

Lunch: chicken breast grilled and topped with cheese and turkey bacon, served with large salad with olive garden dressing, tomatoes, pepperocini

Snack: leftover soup from Saturday

Dinner: 4 oz of steak on top of large salad with light chipotle ranch and homemade probiotic salsa (AVOID POTATO)

    Probiotic veggies are fermented veggies. Traditional kosher deli pickles and traditional sauerkraut were not made with vinegar but fermented through lacto fermentation making them full of healthy bacteria and NOT the bad kind. It is how they were preserved until the last century. This would also include traditional pickled beets and Korean kimchi. :) I made fermented carrots, pickles, and others.

Probiotic salsa is also just lacto fermented... usually using whey as a starter.. sometimes a purchased starter.

I am currently loving the home made pickles. If you ever had true deli pickles they have a slightly different flavor, tart, but SO good. :) Modern methods are used because of the long term storage done today.

Like yogurt or kefir or kombucha these are great for boosting your immune system and helping digestion and have the added benefit of K2.

I am trying to eat 2-3 servings of probiotic foods daily and I am doing more in the form of fermented veggies because the calories are lower. :)
