My spark coach task for today is to list my quick and easy meal ideas here. I try to make double meals when I cook so I have leftovers. When I need two turkey burgers for my husband and I, I will make four. That makes weeknights easier. I usually stew a chicken on the weekends so I can use that meat during the week. I also use Safeway premade salads for lunch. They're delicious, low cal and have quite a variety.
