SP Weigh in Day: SP week 2

I have lost almost 1 pound since Tuesday. I still have about 14 or 15 pounds left to shed until I get to my goal weight.
I made my own soy/dairy free butter yesterday. It took the entire evening. But it was worth it. I did 3 different flavours. Now I can butter my breads, bake, and saute with them. I was skeptical at first since it was made with coconut but there was no trace of the coconut flavour. Amazing.
I think I also made pudding yesterday too, from scratch, butterscotch pudding. I had a small portion but it was yummy. I turned it to pudding with ground chia seeds.
Today I made butterscotch chips with my new butter. Yum. But I did it for baking purposes, and also to use up the rest of my coconut stuff to make mocha butterscotch ice cream. It's still in the freezer solidifying right now but I doubt it tastes like coconut too. I also made gluten free blondies with my butterscotch chips and almond butter. It was amazing. I can only eat 1 slice a day, if even.
Just finished making gluten free pierogies tonight too because I had left over mayo that I needed to use up before tomorrow and some left over samosa filling from when I made gluten free samosas earlier in the week. They look ok.... only time will tell if they taste ok... in garlic butter.
The samosa dough cracked all over though. So I consider it a failure... I will find the right dough mixture eventually.
My next challenge is to make an actual gluten free loaf of bread, gluten free bagels & pretzels & donut holes, gluten free pizza dough that isn't batter, and spring rolls made with rice paper which I have never done before. I also plan to make condensed milk without the milk. Also maybe some croissants if I can get it to be a small amount of calories.
Who would have thought fake butter and a gluten free blondie could taste so good though!
Unfortunately I haven't gotten on the "make cheese with cashews" train and probably never will. So I've been eating goat cheese. I need to use it up this week too. I'll use it to make some frosting for my oat crepes. Oh yea I made apricot jam for the crepes I had this week for breakfast too.
The freezer is full now of all my stuff. But at least the breads are there and so are snacks. Ready to be eaten. Along with 1 burger if I am really hungry. Can't wait for a garlic pretzel!!!
