Delicious tomato soup recipe

I've been slowly collecting recipes that work for myself. They have to fit the low enough calorie range, while still having plenty of fiber and other healthy ingredients.
I found this tomato soup on line and it really is delicious and makes a large portion. Thought I'd put it here for anyone that wishes to try it.

Ingredients:
1 Tablespoon olive oil.
1 Large onion chopped
2 Large celery stalks chopped
2 Cloves of garlic chopped
1 C cannelleni beans (or any white bean)
1 Chicken cube made into 2 cups of liquid
200g Chicken no skin or bone
5 Large tomatoes chopped (I didnt skin mine)
1 Tablespoon fresh rosemary leaves.

Fry the onion, garlic and rosemary leaves in the oil. Add beans, stock and tomatoes.
Simmer for a few minutes to thicken and spice with salt and pepper. I added cayenne pepper for the heat value.
698.8 calories for it all or 349. calories per portion.

Really delicious, healthy and low calorie.

    I am looking forward to when I can eat garlic and onions again, am SO making it. Think I will add a tablespoon of low fat yoghurt for extra deliciousness.

    Thank you Celeste. I will use canned tomatos because they are expensive here when fresh but it looks like a great recipe.
