Planning to eat more vegetables !

I have got away from planning more vegetables in my food plan. There is only two kinds of vegetables i like and wouldn't you know it potatoes are number 1 ! emoticon Corn is number 2 and sliced tomatoes . During the summer when tomatoes are on i usually eat tomatoes in place of potatoes . I like the birds eye vegetables in light cheese sauce but thats just because i like the cheese sauce ! emoticon That's like i like oatmeal IF i have brown sugar but forget it if i don't my tastebuds have went nuts what i use to like i don't anymore . I'll figure it out but i still like my applesauce and i buy it unsweetened . I also love cottage cheese but only eat a1/2 cup when i eat it. When we eat supper at home i try to have 1/2 cupof applesauce 1/2 cup cottage cheese and some slices of tomato for my side dishes . I think they are healthy and i don't think i will ever get tired of them. I need to get back eating beets to i like them pickled or just plain out of the can ! Have a great day !     Good job Vickie, I grew up with eating an abundance of fresh veggies and fruits which I still enjoy to this day, I encourage you to eat as many as you can, I like the suggestion your friend SANDRALEET said about Meal Substitutes, there is Boost and Ensure on the market, they have these products at the Drug Stores and some Grocers...Personally, I don't like them but perhaps they would work for you...I cheer you on in your quest to eat more veggies... emoticon emoticon

    Now that summer's coming there will lots of fresh veggies to eat. I try to stay away from potatoes and corn just because of the starch but I know what you mean about loving them! Since joining Spark I have tried to have a rainbow plate...meaning foods of all different colors, which means lots of veggies and fruits during the day. After all these years I have finally learned to love broccoli and asparagus. Still can't make myself like peas though.

Try to make sure you have at least four colors at every meal. It's fun and you'll feel so proud and this will just naturally make you include veggies and fruits.

    Good plan- get more fruits and veggies in. Try new vegetables once in a while. You might end up liking them too. How about sautéed in broth or with a bit of ranch dressing? How about with hummus? I finally found a hummus I like.

It's about giving it a chance, I looove corn and potatoes too- emoticon

    During my growing up years, our mother introduced us to a wide range of foods. Anything new to us, she insisted that we try at least two tablespoons. Thus, we learned to enjoy most foods because of her wise decision in urging us to try at least a little of everything. I am forever thankful that our Mom is such a loving & wise woman.

All that to suggest that even in adulthood, one can try at least a couple of tablespoons of healthy foods. Doing so may have one realizing that our tastes do change.

When I was a young woman, my cherished mother-in-law made cream cheese & olive sandwiches for a picnic. I remember thinking that there was no way I would ever learn to enjoy such a sandwich filling. Guess who learned to delight in that most refreshing summertime treat & even has some sitting in her refrigerator as she types this? emoticon I especially enjoy it as a cracker topping.

We can learn to appreciate a wider range of foods, when we determine to do so, my precious Sister/Friend!

P.S. I just had to come back & share that I enjoy my oatmeal really hot with a sprinkle of cinnamon (sometimes I add a few raisins to the mixture (before cooking it) for a bit of added sweetness). You might find this a tasty way to enjoy your morning oatmeal. Also, if you really desire the brown sugar - why not just put a little sprinkling over the surface - I mean like less than a quarter teaspoon full? I do that for my darling MrV & he enjoys that hint of sweet. I, also, add about a quarter cup of skim milk on his oatmeal. emoticon emoticon

    I am not too fond of vegetables either but I am trying to learn how to get them into my eating plan but it's not always easy. We CAN do this though!

    I am waiting for my asparagus to show up in my garden. We had a late spring so nothing is growing out there so far. It is one of my favorite vegetables. I like it wrapped in a paper thin slice of deli ham, sprayed with olive oil and grilled until the ham is crispy. Yum!
