Inspired by www.peta.org/living/vege
in my quest to perhaps become fully vegan I came across some quick alternatives for Egg.
For the Light & Fluffy effect use these to replace 1 egg:
1. Baking Soda & Warm water, 2 TBSP each.
2. Baking Powder & Vinegar, 1 tsp each
3. Baker's yeast 1 tsp dissolved in 1/4 Cup warm water
4. Ground Flaxseed 1 TBSP with 3 TBSP water
For the Dense & Thick Binding effect to replace 1 egg:
1. Cornstarch & Water, 2 TBSP each
2. Instant mashed potato, 2 TBSP
These are the ones I'd most like have on hand & use. I'm sure there are others, do share if you have them please!
