Thanks for those of you that read this blog. Your comments encouraged me to keep writing about my days with the Spark Solution challenge.
Ok. I started this challenge with a big loss the first week -- 7.5 pounds. It was to be expected that part of that would come back this week. I made some bad choices in there, I wasn't as diligent with water, and I even skipped a workout, plus 'timing'. Setbacks happen, but we continue on. So I gained back 3 pounds, but I am still down 4.5.
Today I am feeling a little more on track, regardless of that pesky scale, and last night I planned so that I could be on track today. Planning really is a key, and sometimes it is hard.
I made the breakfast cups last night; I doubled the recipe and had 2 of the cups (one serving) this morning, and I have another serving for another day, I may stick them in the freezer. They were very good, with all those homey tastes. I think the potato is the key. I took a picture of them -- here it is:

It is nice that you get two of these cuties in a serving, and they are full of eggy, cheesy, bacony, tomatoey, potatoey goodness. Not only that, but a piece of jelly toast and some milk too.
Lunch today was the lentil veggie soup, and the 'grilled cheese'. Conveniently, this was actually a canned soup, rather than a scratch one. I had to look around to find that variety of soup, I have never had it before, and I thought it was pretty good! Maybe I should look for a recipe, as I sure that would be even better. For the sandwich, I took the pita/cheese/microwave option. I used fat free shredded cheddar, and it was a little rubbery actually. It was okay, but I think grilled and a low fat cheese would have been better.
I opted not to buy a whole package of fig newtons -- I will skip that snack, or maybe have something else. While I see the point that a couple of newtons are okay, I will then have a whole bag of temptation, and will end up eating them. So better for me to just leave them out.
I am looking forward to the fish tonight, and also the banana bread. I'll have to resist sampling that though-- it is for tomorrow!
Exercise wise, it was cool to see how much better I did on the strength training exercises this week as opposed to last week. Gotta love improvements!
