Yesterday I cooked a casserole which tasted better today!

I had leftover spagetti noodles already cooked which I cut up into bite size peices,
I made a white sauce with skim milk and used a little water and flour to thicken, pepper and yes i used lawyeres salt (but no olive oil in it)
Then I added to the white sauce a whole bunch of spinach,
Finally I added cut up peices of low fat low salt ham.
Tada.... I mixed all the ingred. and heated it in the oven. It wasnt perfect but tasted good and warm on a rainy cold day.
I know It has carbs in it but it is one of the few things I have to eat. I am waiting for my next check to go grocery shopping.

I took a good walk today before the rain started to the pharmacy to pick up meds! I also went to the library and was drawn to books on CD. I love the idea that I can listen to a story as I accomplish other goals. Now relaxing watching local news. Seems like it is a friday.

    Cooking from scratch is the best way to go. I cook just about
everything that way. It's not hard and you'll get better as you
go along. Casseroles always taste better the next day.
Try making one ahead of time, then heating it up the next day.
