Said good-bye to another crop of seniors yesterday with, of course, food. Our annual " Picnic" at another manager's house. It's our opportunity to use up anything left from the end of the semester, so the menu was salads, salsas and make your own wraps. What else can you do with 5 lbs. sweet potatoes, 5 lbs. russet potatoes, 3 lbs. carrots, 8 lbs. fresh baby spinach, 4 mangoes, 2 bunches celery, 3 lbs whole garlic, 2 cucumbers, 1 bunch chives, 1 red cabbage, 1/2 green cabbage, 2 dz fuji apples and 4 bosc pears? Fortunately we supplement with frozen and canned foods, always have various cheeses, and can buy meats. We added in 3 lbs of marinated baked tempeh. I made fudge brownies, gluten free brownies and lemon squares, we garnished with fresh candied violets. I was careful with what I ate.
