More on the update & batch cooking pics

So one thing that had been keeping me busy was looking for an apartment for my mom. She is currently living near my sis in Ohio but really wants to come back to Jersey. Well after looking at some awful s**t-holes, hubby & I finally found her a great apartment. It has a nice size kitchen w/new appliances, fairly new bath, 2 small bedrooms, good size living room and very large master bedroom, and 2 walk-in closets with custom shelving/hanging units. Some storage and free washers/dryers in the basement. They even said they'll hook hers up if she'd like. The only downside is it's on the second floor and my mom has knee issues. But she will most likely be getting surgery for it once she's all settled in here.

She will be here for a week the beginning of June so she can see the apartment in person and she plans to move in July. I'm already trying to figure out a workout schedule for when she's here because I will not be taking any time off from work that week...I'm saving the time to take when she moves so I can help her unpack.

I did some batch cooking for the week ahead to help keep me on track.

Seasoned and baked artichokes for snacks/sides

Then I baked some uncured nitrate free bacon

Next up...scrambled up some eggs, chopped turkey, & feta

Chopped some fresh asparagus, yellow & orange bell peppers, red onion, chives, cinnamon basil...look at those amazing colors :)

Mixed that in with the eggs and poured it into silicone cups and in the oven they went...

Fresh out of the oven...delicious!!

For lunches: Balsamic honey glazed chicken and jar salads

    It all looks soooo great! I always LOVE your food blogs. Where do you buy the bacon at? I love bacon but I'm really not a fan of processed/cured meats.

    Bah! Never thought about eggs in silicone cups. Brilliant! (Nope, not a foodie here, LOL, but love having them as friends so I can LEARN!)

    The artichokes look delicious. I have a bag of frozen artichoke hearts in the freezer, but don't know what to do with them. Maybe I'll roast them with some fish.

    Your silicone cups are so pretty! I've never seen any like that before. They would look great if one is having people over for Sunday brunch. Your pictures show what a great cook you are. Thanks for posting the pics.
