SP Weigh in Day: SP week 1

I started SP at 138 pounds. Today, 1 week later I am 137.1 pounds. I have lost very close to 1 pound in a week. Hopefully next week another pound will be gone.

I've made some major changes in my diet.

Along with being soy free now and lactose free, I am gluten free. I started the gluten free diet 2 days ago on Thursday because of my immense constant pain in my knees. So far, I haven't felt any random debilitating pain, just dull aches when climbing stairs.

I tried to also make Chia seed gluten free bread in my bread machine using a recipe I found online and completely failed! First, the flour wouldn't kneed into dough even though the chia seeds give off a jelly, so I added a little more water, not even a lot. The entire bread was raw after 3 hours in the machine. I then took it out and put it in the oven. After 3 additional hours in the oven, the crust was a normal crust colour, but the entire inside was raw dough! I wasn't about to throw it out since the chia seeds are a superfood and has omega 3s and protein and fibre, and probably other things. So I tore the bread open after I let it cool for a bit, and scooped out all the sticky insides. I then crumbled the insides onto a pan and baked for 2 hours in the oven. I took the empty crust shells and broken them apart. Since their insides were sticky I put them in the toaster oven. I decided to then put the crust in a food processor to make gluten free bread crumbs. The crumbled insides are being used for croutons on my salads. So a disaster turned out not to be a disaster at all. And if I run out of bread crumbs, I can just grind up the croutons.

The only thing I have noticed with being gluten free now is the amount of carbs I'm consuming. Now that I am substituting other flours for wheat flour, my carbs are sky rocketing over the suggested max amount.

I've also still gone over my WW daily 26 points by 1-2 each day. I'm going to stop that today. Last time going over 26 points no matter how much or how little affected my weight loss.

I still need to buy soy free butter. So until then I'm just using oil. Too many things have soy in them. I have to start making my own salad dressing too now, because I double checked a new bottle and it had soy.
