Butternut squash curried turkey sauce over zucchini

This was so good I just had to share it!! It's probably my favorite sauce ever. I froze some for later.. whenever I need a quick meal.

Last night we grilled some curried turkey burgers (Recipe: 1 lb 99% lean turkey breast, 1 egg, 1 tbsp sweet curry powder, 1/2 tsp cayene, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 2 diced scallions, dash of sea salt and pepper, a handful of quinoa flakes or rolled oats... makes 4 burgers).

I used two of these leftover burgers (=8 oz of ground turkey breast), and sauteed that with diced onion and a drizzle of olive oil. Then, I added one bottle of this delicious butternut squash sauce:

Then, I added 6 cups of raw spinach, covered the pan and let it simmer for a few minutes, just until the spinach wilted.

In another pan, I made my zucchini "pasta."

The whole thing took me maybe 10 minutes... and the result was magical. The flavors were complementary - sweet, spicy, and savory. Yum.
To finish, I grated some parmesano reggiano and parsley over the whole thing. And poured some wine, of course.

Try it... trust me. Soooo good!!
