This Spark Recipe caught my eye the other day and we fixed it for dinner tonight. I made 1/2 recipe since it is just hubby & me. We both really liked it with a red bell pepper. Here is a photo of hubby's plate - it is a little fuzzy, but I tried. Hubby topped his with salsa, and had the Avocado Cream on the side.

We enjoy stuffed peppers ( I usually make them with ground turkey, salsa, and chopped potato. This all meat and veggie version is a nice change! Think I'll make baked whole wheat tortilla chips to go with it next time.
